I was having a look at some of the recipes I have posted over the last few weeks and I notices a recurring theme, most of them were perfect to satisfy my sweet tooth. From Pancakes and Pecan Fudge, to chocolate and lemon cheesecake mousse, I am sure you were starting to wonder if I ever ate real food. But with summer in full swing, I am desperately trying my hand at dishes that are quick & easy (I know your not surprised) and that are light and don't have to be eaten heated.
I feel like your standard salad can get boring pretty quickly, so I really try to get creative and add all the flavors that get me excited for meal time. With this salad, I added a ton of my favorite things and the result was perfection.
This is actually a bit of a 2 in one recipe. I like to make a double batch of the ranch dressing so that I can keep it in the fridge and use it in some of my other recipes.
