Mornings can be a little crazy in our house, so trying to prepare breakfasts on the fly can be a little difficult, even on a good day. That's why I love this recipe. Its so easy to make, its full of flavor and it keeps really well - so I usually prepare it in bulk and keep it in the fridge so that breakfast for the whole week is sorted.
A quiche is basically an egg and milk custard, with a variety of other ingredients added, usually chesses, meats or vegetables. Traditionally, quiches are baked into a pie crust, but to keep this low carb and keto friendly I skipped the crust.
I used spinach and feta as the main ingredients in this quiche. Of course, there are a tons of variations. Some of my favorites include bacon & onion and mushroom, tomato & goats cheese. To make this a more economical dish, use vegetables that are in season.
