This morning we woke up to snow. Since its "apparently" Spring and I have already spent a few days enjoying the outdoors and wearing shorts, the snow wasn't exactly high on my weekend wish list. But it does come with benefits, like spending the day indoors making good food and watching movies.
And with the cold weather outside, I was really craving something warm and yummy. SO our search for a low carb pancake recipe began. We found a few, but none that we had all the ingredients for at home (and I had no plans to leave the house with that weather). So we had to improvise a little. The result was these absolutely delicious and incredibly easy low carb pancakes.
