I have a weakness. It's my real kryptonite. It doesn't matter if its hot or cold outside, I can happily indulge in it. When I say indulge I actually mean go completely over board. Absolutely no self control. Yes, I am talking about ice-cream.
Now normally healthy eating and delicious ice-cream are not two phrases that are heard together. But when you are following a low-carb / keto lifestyle, ice-cream does not have to be on the foods to avoid list.
Since hubby knows that ice-cream is my weakness (and his too) and is all about the healthy living lifestyle, he surprised me with an ice-cream maker so that we could try out some healthy home made recipes. I got this great Hamilton Beach Ice cream maker from Amazon. Its pretty basic, but it gets the job done.
Now I have a confession, I have had this ice-cream maker for a couple of weeks already and I have already made a good 10 batches of ice-cream before I made this amazing peanut butter keto ice cream. I tried a large range of ingredients and flavors in an effort to find the perfect, creamy ice-cream that is low-carb and does not compromise on taste. Although the first few had great taste, I wasn't always happy with the consistency (it can get tricky when you don't add all of those crazy preservatives). But I am so happy to have finally found a recipe that was not only delicious and creamy, but also had the perfect consistency.
Now if you are counting carbs very strictly, please be aware that this recipe does still have carbs in it.
* You can switch out 2 cups of heavy whipping cream for full fat milk instead. This will change the consistency slightly - but its still delicious and can save a little money on the cream
** If you are not following a low-carb lifestyle, you can replace the sweetener with granulated sugar
*** If you are looking for a little bit of crunch, then switch this out for some crunchy peanut butter instead.
**** When serving, allow ice-cream to thaw for a few minutes before serving.
