After the huge success of the low-carb peanut butter ice-cream, I was excited to get back in the kitchen to work on some different ice-cream flavors. And, even if I do say so myself, this one smashed it out of the park!
To make my ice-cream, I use the Hamilton Beach Ice cream maker from Amazon. It's very basic, but it gets the job done. Now if you don't have an ice-cream maker - do not fear. You can still enjoy this delicious ice-cream with very little effort. Just check out my recipe notes below.
* You can switch out 2 cups of heavy whipping cream for full fat milk instead. This will change the consistency slightly - but its still delicious and can save a little money on the cream.
** If you are not following a low-carb lifestyle, you can replace the sweetener with granulated sugar.
*** When serving, allow ice-cream to thaw for a few minutes before serving.
